Method
 

Bloom the Gelatin
  1. In a small bowl, sprinkle the unflavored gelatin over 1 tablespoon of whipping cream. Gently stir and then let it sit for 5-10 minutes to soften.
Puree the Strawberries
  1. In a food processor, combine the vibrant sliced fresh strawberries and icing sugar. Process the mixture until it is completely smooth and beautifully pureed. You may need to stop occasionally to scrape down the sides with a rubber spatula to ensure everything is well blended and uniform.
Melt Gelatin Mixture
  1. Pour the fragrant strawberry puree into a small saucepan. Add the bloomed gelatin mixture we prepared earlier. Stir this over medium heat, watching carefully until the gelatin is completely dissolved and the mixture just begins to simmer, but do not allow it to boil. Once melted, remove from heat. Transfer the mixture into a bowl and allow it to cool completely at room temperature for at least 30 minutes. It's important not to refrigerate at this stage. While it cools, melt 2 ounces of high-quality white chocolate and stir it into the strawberry mixture until smooth. For an intensified burst of color and strawberry flavor enhancement, stir in 1 teaspoon of freeze-dried strawberry powder.
Whip the Cream
  1. In a separate mixing bowl, using an electric mixer, beat the remaining 1/2 cup of whipping cream on high speed until beautiful whipping cream stiff peaks form.
Combine and Fold
  1. Gently fold the cooled strawberry mixture into the whipped cream. You can do this with a spatula or by beating on low speed with the electric mixer, just until everything is combined. Be careful not to overmix, as this will deflate the delicate whipped cream and result in a less airy mousse.
Shape and Chill
  1. Carefully transfer the light and fluffy mousse into a piping bag fitted with a decorative tip. Pipe the mousse into your heart-shaped silicone molds or into elegant serving bowls. Refrigerate the mousse for at least 2 hours, or until it is perfectly set and firm. Alternatively, pipe the mousse into 6 mini chocolate covered waffle bowls for a charming, rustic presentation.
